I think I was actually over the age of 20 when I realized that brussels sprouts weren’t as torturous as TV always led me to believe. In fact, when cooked right, Brussels sprouts are actually something I crave, and I even get excited when I see them on a restaurant menu! I won’t lie though, I HATE steamed Brussels sprouts. Truthfully, I dislike any steamed or boiled vegetables. That’s right, I prefer ALL my veggies to be raw, sautéed or roasted. 1. Oven-Roasted Brussels Sprouts
One of my favorite ways to cook brussels sprouts is just so simple! Just cut your brussels sprouts into quarters and toss them in a bowl with olive oil and parmesan cheese. Add salt and pepper to taste if you like and pop them in the oven for 20 minutes and 350°. I’m telling you, these oven-roasted brussels sprouts are so delicious- the touch of parmesan is sure to be a crowd-pleaser!
2. Balsamic Brussels Sprouts
I had this balsamic brussels sprouts recipe at a restaurant in 2016 and have been hooked ever since! All you need is a bag of shredded brussels sprouts from Trader Joe’s, balsamic vinaigrette, honey, and thinly sliced apple if you want an extra punch of flavor!
Put the brussels sprouts in a frying pan with a tablespoon of olive oil and let cook on medium heat for about ten minutes. Add the thinly sliced apple (my favorite are Pink Lady for a sweet flavor) to the sprouts, the balsamic vinaigrette, and honey (about 1 tbs), and let cook for an additional 2-3 minutes.
You want the dressing to thicken so it may take a little longer depending on your stove. This makes for the perfect healthy side dish or snack! And yes, it is my FAVORITE shaved brussels sprouts recipe!
3. Brussels Sprouts and Lentil Salad
Now hear me out, I know these two things sound like every child’s nightmare, but I promise you will be pleasantly surprised by the punch of flavor in this healthy dish. This easy brussels sprouts recipe will quickly become one of your favorites! You just need three ingredients, shredded brussels sprouts, lentils, and toasted sesame dressing. You can find all of these ingredients at your local Trader Joe’s! Toss the shredded brussels sprouts in a frying pan with a little olive oil (OK I lied, there are 4 ingredients) and cook on the stove. After the sprouts have softened, add in the lentils and the toasted sesame dressing. Let cook for 2-3 minutes and viola! Dinner (or side dish) is served!

4. Parmesan Brussels Sprouts Salad
Are you starting to catch that parmesan goes well with Brussels Sprouts? For this recipe, you actually don’t have to cook the brussels sprouts. That’s right, you can indeed eat brussels sprouts raw! You are more than welcome to oven-roast the brussels sprouts if you prefer! Once you’ve cut your sprouts into quarters, throw them into a bowl and mix in 1/4 cup of fresh lemon juice (about 2 lemons worth), 1/2 cup of Olive Oil, and 1 tablespoon of Dijon Mustard. Add 1 small clove of minced garlic, 1 tablespoon of finely chopped shallots, and salt and pepper to taste. Mix it all together and top it with parmesan cheese! So simple, yet so delicious!
Pro Tip: You can also make this with Shredded Brussels sprouts as well for more of a true “salad” feel!

5. Roasted Brussels Sprouts & Butternut Squash
This roasted brussels sprouts recipe packs in a punch of flavor with minimal ingredients. All you need are brussels sprouts, butternut squash, dried cranberries, pumpkin seeds, and maple syrup. Cut the brussels sprouts into quarters and the butternut squash into small chunks- Trader Joe’s and many other grocery stores sell them already in chunks! Drizzle in olive oil with salt and pepper to taste. Roast them on separate pans at 450°. Be sure to leave space between the veggies so that they actually roast; if they are too close to each other they will steam!
Cook the brussels sprouts for 15-18 minutes and the squash for 22-24 minutes. Drizzle 2 tablespoons of maple syrup on the veggies and place back in the oven for 5-8 minutes or until they caramelize. Once you remove the sprouts and squash, place them in a bowl with the dried cranberries and pumpkin seeds. Add another 2 tablespoons of maple syrup and your tasty side dish is ready!

Thankfully it doesn’t take a lot of ingredients or prep time. Truthfully you could follow any of your favorite oven-roasted brussels sprouts recipes just to cook the sprouts and use your favorite taco toppings, but you don’t want to skip out on the spicy sauce!
7. Shaved Brussels Sprout Salad
If you haven’t caught on, I am addicted to quick and easy recipes that are so simple! What I love about the vegan brussels sprout recipe is that it requires minimal ingredients and no chopping of ANYTHING. The best part? You can eat it raw or cooked! Toss your shaved brussels sprouts and a little olive oil in your frying pan to sauté. Mix together 2 tablespoons of balsamic vinegar with a 1/2 teaspoon of rosemary and a little salt and pepper. After about 5 minutes, mix in the dried cranberries, chopped pecans, and balsamic dressing mix that you just made. Let it cook for 1-2 minutes more and serve! If you looking for a raw salad, skip the extra olive oil and mix the rest of the ingredients together in a bowl!
