Trader Joe’s Dinner #3 for the week is this yummy Lemon Ricotta Salad. I must admit that when I was looking for recipes, I was so intrigued by the photo that I didn’t even realize that there wasn’t a recipe!
Ingredients: When I went back to figure out how to cook this meal, I was slightly confused because the picture showed 4 ingredients but the girl who wrote the article only listed three ingredients – lemon ricotta ravioli, arugula, and shaved parmesan cheese. The picture included some kind of nut as the forth ingredient but I could not figure out what it was for the life of me. I decided to add a little freshly squeezed lemon at the end!
Cooking was fairly easy, the ravioli only took 3 minutes to cook while I prepped the arugula in a bowl. I really wasn’t sure how this was going to tasted after it did not appear to use any dressing or sauce which Is why I decided to add a little lemon juice for added flavor. Just like thee recipe mentioned, under 10 minutes to prepare!
Overall Rating: We were both slightly confused by the salad when we started eating, pasta and lettuce do not typically go together in one dish. But the more we ate, the more we enjoyed the meal! This ravioli actually has such an amazing flavor by itself which is probably why there wasn’t a dressing shown in the original recipe. I would definitely make this one again just because it was so different and most importantly, EASY!
