Day 6 – BBQ Chicken Zucchini Boats

Dinner Recipe BBQ CHICKEN ZUCCHINI BOATS

Tonight’s dinner featured these delicious BBQ Chicken Zucchini Boats! I want to start by saying that pins on Pinterest that involve a video ALWAYS make me feel more confident in my own ability to actually cook the meal successfully. Shout-out to Monique for showing an easy step-by-step video on how to make these babies.

I ran to Trader Joes after work to pick up the zucchini (Shop Rite was out when we went on Sunday) and was so tempted to pick up everything in the store.  If you haven’t ever been to a Trader Joes, you need to find one ASAP, it’s a magical place.  I brought my mom there for the first time a few months ago and she is just as addicted as I am! BTW Trader Joes had chives- go figure.

Ingredients– I actually had almost everything for this one. I did sub out red onion for white onion since there was some left from our Stuffed Shells earlier in the week. I also changed out the cheddar cheese for mozzarella cheese (slim pickings at Trader Joes on a Friday night).

Zucchini Boats Dinner Ideas

Ben and I both had virtual plans for this Friday night so we rushed to get dinner cooked as quickly as possible.  I was nervous about making the zucchini boats, but it was actually easier than I thought to spoon out the insides without breaking through the exterior of the zucchini!

Monique kept talking about shredded chicken in her recipe, but did not quite clarify how to make said shredded chicken.  We had extra thin chicken breasts in the fridge that I was able to cut up into small pieces which had almost the same feel as shredded chicken.  If I had thought to re-look at the recipe this morning it might have crossed my mind to throw the chicken in the crockpot so that it would shred- oh well. I threw the chicken in a pan with some garlic and onions to maximize the flavor.

Ben set up the BBQ sauce and cheese and was very concerned about the lack of BBQ sauce in the bowl. We added the chicken, garlic and onion from the frying pan to the BBQ and cheese bowl. After it was all mixed together we scooped the mix into the zucchini boats and topped with a little extra bbq and more cheese. It was cooked to perfection at 35 minutes. I topped with green onion and cilantro as directed.

Overall Rating: We will absolutely make thee BBQ Chicken Zucchini Boats again! Maybe not something we will eat every week but it was so good that we will be adding it into our rotation next month.
