Day 1 – Chicken Teriyaki Bowls

Teriyaki Chicken and Salmon Bowls
Every weekend I sit down and write out everything my boyfriend and I are eating for the week so we don’t wander around the grocery store picking up everything we see in site (which you typically can’t actually use to make real meals anyway). Sunday I went through my pinterest boards and set out to find 6 meals for us to eat this week that look appetizing and most importantly, somewhat easy. I’ll start by saying that I am certainly no chef. This blog is NOT a food blog, I’m just here to share my experiences with you in challenging myself to do something different everyday. 
 
Grocery shopping – This was hard! Usually when you cook, you have a lot of the spices or usually buy the ingredients so you know exactly where to find them. I ended up making a few substitutions (can someone please tell me where you find chives at shoprite?!)- which you will find is a trend with me when I cook. I’ll always post the source of my dinner along with what I actually cooked to give you some ideas of how to make it work for you! 

I’ll start by saying I don’t eat fish so this was the last thing I was interested in trying. Ben however, loves salmon and thought this looked great! I decided to make myself a Chicken Teriyaki Bowl while he made salmon for himself. We both looked at the depth of the marinade and Ben suggested we try our favorite Island Soyaki from Trader Joe’s instead (saved time and we knew we would like it).

Ingredients– Of course, we hit a snafu earlier at the grocery store- no edamame. We opted for snap peas which I’ve only ever eaten raw as a snack and wasn’t totally sure how this would cook. Ben made his salmon in the oven with salt and pepper (forgot to add his Island Soyaki until halfway through!) while I cut my piece of chicken into chunks that I cooked on the stove with the Island Soyaki sauce.

I also opted for snap peas in a frying pan with some minced garlic. Shout-out to Costco for the LARGEST jar of minced garlic anyone could ever need- although my car still smells like garlic from the 4 hour trek from Boston to NYC.

We made white rice to go along with it- skipped over the sesame seeds and other steps to make this rice more authentic. Basmati did us well. I topped mine off with green onion because there was not a chive to be found at ShopRite. 
Unfortunately I remembered about 3 hours later that we were supposed to include the Avocado. I was especially bummed because I checked all of the avocados at ShopRite for the most ripe one 🤦‍♀️

Overall Rating– We really loved our teriyaki bowls and we would cook it again for dinner in the future. It was also prepped and cooked in about 20 min, we LOVE a quick dinner! This one is a winner!
