Day 10 – Ground Turkey Nachos

Ben and I have been on the hunt for some quicker recipes! This week I decided we would have Nacho Tuesday after finding this delicious Loaded Ground Turkey Nachos recipe on Pinterest!

Ingredients: This girl does NOT do spicy so I went with a very mild salsa and skipped out on the jalapeños. We used ground turkey instead of ground beef to minimize that red meat intake. I also did not see any corn in my cabinet when I pulled all of the ingredients out – but who puts corn on nachos anyway?

Simple Ingredients for these Nachos!

This one was actually pretty simple! I threw the ground turkey (I used about 2/3 of a pound) in a pan with whatever I had left of my taco seasoning and a little bit of oil. Once the meat browned, I added in the full jar of MILD salsa and let it all cook for a few minutes.

While the meat was soaking up all of that flavor, I chopped half of a white onion, opened the beans and pre-cut olives, and grabbed the shredded cheese from the fridge. Ben lined a baking sheet with parchment paper – I thought her recommendation to use foil sprayed with non-stick spray was a bit odd and required more effort. He found the bag of corn chips and we were in business!

Cook Ground Turkey (or Beef) with taco seasoning and 16 oz of Salsa
Layer chips, meat, black beans, onions, olives, and cheese. Bake for 6 minutes at 400°F.

We topped the meat with the onions, beans, olives, and cheese and popped in the oven at 400°F degrees for 6 minutes. As soon as well pulled them out of the oven we tossed on some tomatoes, cilantro, and avocado. I added a little freshly squeeze lime on top for a little extra zest. We should have just eaten straight from the pan for less effort but Ben actually got us plates and forks for this one, so classy.

Overall Rating: It tasted just like our date nights on the Upper East Side in a pre-Covid world. These Loaded Ground Turkey Nachos surprisingly weren’t too heavy. Unfortunately, we definitely made way more food than we needed for two of us! I will probably hold this recipe for a football Sunday or a future party – whenever we can host those again! I tried to save the leftovers in the fridge but I have a feeling I will end up tossing them tomorrow. I should have followed the author’s guidance in only making what we were going to eat.

P.S – All of the flavors balanced out very well! I even thought I might have been able to handle a salsa that was spicier than just mild – maybe next time!
