We are kicking off our week of Trader Joe’s (Pinterest) Inspired dinners with the simple 3-ingredient Sesame Brussels Sprout and Lentil Salad. If you recall, Mondays are all about QUICK dinners. I specifically put this one on my calendar for today since it said 5 minute cook time. BINGO!
Ingredients: 3 Ingredients, there was no way to mess this one up! Thankfully all of the Trader Joe’s stars aligned for me and they had all 3 ingredients. I am a massive fan of their shaved Brussels spouts, but I won’t tell a lie – I have NEVER had lentils before. I know they are good for you but

Thankfully the TJ’s lentils actually come pre-cooked in the refrigerator section – how brilliant?
I had the best intentions of getting dinner cooked before my meeting block started at 6:30 but I chose working out over cooking (sorry Ben!) as I probably would prioritize any day if I am being honest. Unfortunately for Ben, this meant a 9pm dinner. Good news is that this truly took under 10 minutes to cook!
I threw the Brussels sprouts in the pan with some oil for about 5 minutes to get soft and then added in half of the package of lentils for another 2-3 minutes. Patty recommended 3 tablespoons of the Sesame dressing but I was was to exhausted to find the measuring spoon and totally eyeballed this one – maybe went slightly overboard but it was delicious!
Overall Rating: “The texture is interesting”. The taste was fabulous! We both were surprised at how much flavor this Brussels sprout and lentil salad. Even better, it was very filling. I cannot wait to eat the leftovers! This one will definitely be added to my “how is it 9pm already” dinner rotation. Honestly I can’t wait to make this one again. Who knew lentils taste so good?

Fun Fact of the day: The plural form of Brussel sprout is actually Brussels sprouts and 77% of the population spells it incorrectly. My mind is blown right now.
