Day 19 – Chile Lime Fajitas

I have waited all week for this one! I was never a big fajita person, but I do always remember my sister ordering them at any restaurant that served fajitas growing up. I was definitely expecting to break out the skillet for this one and was a little surprised to see it was cooked in the oven.

Ingredients: Thankfully this one did not require a lot: a few peppers (Costco has a great deal on try-colored peppers), an onion, a lime, some cilantro, olive oil, chicken, and the popular chile lime seasoning from Trader Joe’s. I have seen this time and time again but truly had no idea what to I would cook with it until I saw this pin. I did unfortunately miss the part on the ingredients list that said to pair with riced cauliflower or tortillas (none of which we had in the house tonight) so we whipped up some white rice to use as a base.

Minimal Ingredients = Successful Dinner

This one was EASY. Just cut up the peppers, onions, and chicken and toss in a bowl with olive oil and chile lime seasoning. I have given up on measuring out oil and seasonings unless the recipe is very specific. These days I am more of a “shake it until it the food looks covered”  kind of chef. I discovered one sheet dinners on Pinterest a couple of years ago and it was love at first site. As I mentioned earlier, I was a little shocked that this was being cooked in the oven but I was ready to roll with it.

Once everything was on the tray, I popped it in the oven at 425°F for 15 minutes, pulled it out and flipped everything and let to cook for another 15 minutes. The chicken was slightly over-cooked so another 10 minutes instead of 15 probably would have been fine. Debby does say you can drain the liquid when you take it out of the oven as well but I was too nervous that my dinner would end up in the sink!

Put all ingredients in a (much bigger) bowl and stir in olive oil and Chile lime seasoning.
Lay veggies and chicken all on one tray (chicken not pictured).

We laid our fajitas over white rice and topped with freshly squeezed lime and cilantro. So simple! Probably would have been more authentic with a tortilla but it still tasted great!

Don't forget the tortilla, rice, or riced cauliflower!

Overall Rating: The house smelt AMAZING after just ten minutes of cooking. It honestly tasted awesome! We loved this one. So much flavor in the seasoning (and really not too spicy at all for this spice whimp)! I also got a pro-tip from a friend to try the chile lime seasoning with chips and guac and will definitely be doing that soon!
