Mondays are always a tough one for fitting dinner in at a reasonable hour. I usually get home from work, sneak a quick workout in and then hop on a couple of meetings that usually wrap up around 8:30. My sous chef however, does 16 hour fasts so we always try to finish eating by 8pm which is more difficult than one would think. When I saw Tortellini in the mix I knew it would be perfect to sneak in between events this evening!
Ingredients – We actually did pretty well finding everything we needed for this dinner! We did skip out on the chicken though as we are trying to only do two meat dinners a week this year per Ben’s request. I am also not a fan of sun-dried tomatoes and was going to skip these, yet they somehow ended up in our shopping cart.
This one I did by myself while Ben worked out – SO EASY and SO QUICK! I’m telling you the entire thing with prep and cook time was 20 minutes tops. I’m not a huge salt fan so I used it lightly with the asparagus, otherwise we stayed pretty much on recipe tonight.
Overall Rating: Would definitely make this again in February! Truthfully this tasted like it came straight from an Italian restaurant, I was even impressed with my own cooking skills(with the help of Julia)! Highly Recommend!
