The picture for this one looked AMAZING! I wish it had a better title but it originally was “Sheet Pan Sausage and Veggies”. I am not a sausage fan at all – Ben suggested chick or turkey sausage but I couldn’t bring myself to purchase them when I was at ShopRite this weekend
Ingredients – As I mentioned, I decided to pass on the sausage but thought I would just add chicken instead. I also completely forgot the parmesan cheese at the end! I am so distraught looking at her beautiful pictures, but we probably didn’t need the cheese anyway. The other thing that I loved about this recipe is that Chelsea put a list of veggies that you could also use that would stick cook thoroughly in the same amount of time so you can customize it to your liking!
This one seemed pretty quick and easy, cut the veggies (which you can prep ahead of time), season and pop in the oven! Of course this all took slightly longer than expected but what else is new here? Neither of us were super hungry tonight because we spent the day at Ben’s brother-in-law’s house for the afternoon and he grilled this awesome steak and hand-made fries for us. Whatever we cooked tonight was not going to top that!
I decided to skip the chicken after I pulled it out for a lot minute defrosting this morning. Oh well, veggies seemed the way to go. Per usual, I also really estimated the amount of seasoning that went into this dinner. I could not find the tablespoon measuring device (I have no idea what you actually call those things?), Ben likely had it hidden with his coffee but I really didn’t have the energy to go looking for it. The only spicy I made sure to measure properly was the paprika because I didn’t want to over do it and ruin dinner.
Fun Fact: I knocked the paprika all over the counter and floor as pictured below. Ben was playing video games and missed the entire ordeal and then says “Woah, how much garlic did you use?” -_- The apartment still smells like paprika, it could be worse.
I put the sheet in the oven and flipped the veggies at 15 minutes as she mentioned. Easy peasy! And the veggies smelled amazing each time I pulled them out of the oven. We made some rice to pair with the veggies and topped with parsley when it was all done (totally forgot the parm). Ben was CONVINCED this would taste just like the dinner we had the night before and added the Trader Joe’s cilantro lime dressing. It was a nice touch.
Overall Rating: It had less flavor than we both expected but still tasted good. Since we typically eat only sweet potatoes it was nice to mix it up with the mini potatoes. I also love anything with fresh veggies – specifically broccoli and peppers so I enjoyed this one overall. We probably will not add this into our regular rotation, but we would still cook it every once in while.
