Day 23 – Baked Zucchini Sticks

Easy Healthy Snacks Zucchini Sticks

Today Ben and I are starting our 11 day shred to kickstart our health goals for the year!  I try to do an 11 day shred once a month just to help balance out all of the yummy foods I love to eat (hello ice cream, insomnia cookies, Mexican food, and all of the steak)! For our 11 Day Shred, we eat meals that are 400-600 calories max for dinner (Ben is WAY stricter with this number than I am, so I try my best here).  On top of all of that, it’s MONDAY! You know what that means- QUICK DINNER!

I was really debating between this meal and a Zucchini salad – both had videos to entice us. Ben is not a big corn fan so we went with these zucchini sticks. It required 4 medium zucchinis, olive oil, parmesan cheese, breadcrumbs, salt and pepper, EASY!

Minimal ingredients required for this easy dinner.

I sliced up the zucchini into sixths as Nagi mentioned in her recipe and laid them all tightly together on the baking sheet. I sprinkled on salt, pepper, breadcrumbs, and parmesan cheese as Nagi instructed. I always find it odd when the recipes have you just layer on the ingredients on the food that is already on a baking sheet instead of putting it all in a mixing box first. I also thought it was strange that she said to put the olive oil on after everything else. I thought the olive oil wouldn’t get the correct coverage and used my olive oil spray instead (thank you Trader Joe’s). Popped it in the oven for 12 minutes at 450°F and let it cook to perfection!

Slice zucchini in sixths and place tightly on a baking sheet.
Coat with breadcrumbs, parmesan cheese, and olive oil.

Overall Rating: “What is it? These look like cucumbers”. I love when Ben gets so excited about the dinners he chooses, shake my head. I was thinking it might be good with a little red sauce, but I actually preferred it plain. The recipe did make It sound like a side dish when I actually read through the entire page, but it worked for us. We each had a salad to go with it and ate up. Despite Ben’s cucumber comment, I will be making this one in the future, maybe as a side or maybe as a dinner. It was surprisingly very filling!
