Day 24 – Turkey Stuffed Sweet Potato Tacos

I was feeling a little Taco Tuesday and Ben was feeling some sweet potatoes, what better combo than a Ground Turkey Stuffed Sweet Potato?? Today is day 2 of our 11 Day Shred which means another 500 calorie dinner for us!

Ingredients: This one was more spices than actual food ingredients.

  • 2 Sweet Potatoes
  • Olive Oil
  • Ground Cumin
  • Salt & Peppeer
  • Ground Turkey
  • Garlic
  • Chili Powder
  • Dried Oregano
  • Paprika
  • Shredded Cheese ( I used Mexican)
  • Diced tomatoes- I skipped the canned diced tomatoes in the frying pan (make sure you add 1 or 2 tablespoons of water to the pan with the spices) and decided to just use fresh tomatoes to top at the end.
  • Cilantro – I replaced the parsley with Cilantro because I wanted the full Taco Tuesday effect and parsley felt too Stuffed Peppers for me.

I was in shock when I pulled this recipe open and it said 10 minute prep time and 10 minute cook time. I thought it was really too good to be true! I then saw the first instruction was to poke holes in the sweet potatoes and place in the microwave and was a little turned off. I am not even sure the last time I made a microwave potato but I knew the oven would take too long so we went for it. While the potatoes cooked (about 8 minutes), I started browning the ground turkey and getting all of the spices together. Some I measured and some I winged, overall it still tasted pretty great!

Prepare spice mix while ground turkey browns.
Add spice mix and 1-2 tablespoons of water

She was not joking about the 10 minute prep time and 10 minute cook time, this one was almost too quick that I needed Ben to step in and take over manning the pan while I scooped out the potatoes. I found it to be odd that you have to spoon out the potato, mash it, add salt, pepper, cumin, and oil just to replace it in the potato exactly where you took it from! I did it it anyway but may try it without this step next time. I piled on the ground turkey and sprinkled with cheese before popping it in the boiler for 30 seconds, YES, 30 SECONDS!

Mash up inside of potatoes with salt, pepper, cumin, and olive oil

Overall Rating: “It tastes like a potato with meat on it”. And then Ben decided that he LOVED it. Ben skipped over the tomato and cilantro so his was basically just a potato with meat and cheese on it. This dinner had a lot of flavor and I am so happy about it. Will definitely be making this one again soon!

Boil for 30 seconds until cheese melts!

PS – You can just use a taco seasoning instead of mixing all of the spices with the Ground Turkey. The taco seasoning has a lot more sodium so making your own spice mix helps minimize the sodium!
