Day 25 – Salmon & Sweet Potatoes

As part of my 11 Day Shred, I am cleansing (intermittent fasting) today and tomorrow which means no dinner for me. While we are both doing this 11 Day Shred he does his daily 16/8 fasts where I love these full day fasts. Both have their benefits, you can’t go wrong here. Ben loves when I fast because it’s the only time he gets to eat fish! I let him take the reins here, see even took his own pictures for you while I went for a walk. Here’s how it all went down:

I picked up 1 pound of fresh Salmon for Ben this week. Since I am fasting for 2 days he wanted enough to have leftovers for tomorrow. Usually I’ll grab frozen salmon for him at Trader Joe’s or Costco but I don’t love the frozen section at ShopRite (I never thought I would be THAT picky about food that I am not even eating- that’s true love) and Ben also has to remember to defrost said frozen salmon so fresh was the way to go here.

Ingredients:

  • Salmon as noted above fresh or frozen up to you!
  • 2 sweet potatoes
  • Olive Oil
  • Salt and Pepper

Season salmon with olive oil, salt. & pepper

Pre-heat the oven to 450°F and prep the potatoes. He only adds oil and salt before popping them in thee oven for 45-50 minutes. He loves the MASSIVE sweet potatoes,. Probably can cook for 30-35 minutes if they are small.

After he prepares thee salmon by adding a little oil and salt and pepper to taste. The salmon only needs about 12 minutes to cook. These pieces were a little thicker so he cooked for 15 minutes. When he pulled them out of the oven they didn’t look fully cooked so we put them back in for another 5 minutes. They came out perfect!

Quick Dinner AND there are leftovers for tomorrow!

Overall Rating: “I’ve had it before and I’ll have it again”. Or my favorite “I love when Krysta fasts because I get my salmon and it’s very easy to cook”. We like easy in this household if you couldn’t tell.

 Ingredients:

  Serves 2

  • 1 pound of Salmon
  • 2 Sweet Potatoes
  • Olive Oil
  • Salt & Pepper
  • Directions:
  1. Preheat oven to 450°F degrees
  2. Pokes holes all around potato with a fork
  3. Brush (or use your hands to rub) olive oil all around potatoes
  4. Add salt
  5. Place on baking sheet with parchment paper and cook in the oven for 50 minutes
  6. Rub oil on salmon and sprinkle salt and pepper on both sides of salmon.
  7. Cook salmon in oven for 12-15 minutes. Bake for a little longer if Salmon is thicker.
