Day 28 – Parmesan Zucchini Salad

I won’t lie, I was very enticed by the video of this dinner pin. I ALWAYS loved when I can see how quick and easy a dinner is going to be with a quick video. My plan was to actually do this one for dinner last Monday since that’s when I always need a quick dinner idea, but today was the day. It worked out well because we got home at 9pm and dinner was ready by 9:25pm!

Ingredients: Another minimal ingredient dinner, YES! This one required zucchini (I only had one large one in the house but the recipe recommends 4 medium sized zucchinis) a can of corn, beans, minced garlic, salt & pepper, cumin, and Italian seasoning.

I cut the zucchini into pretty small pieces and threw them in the frying pan with a little olive oil and some salt and pepper to taste. The recipe stresses not to over-cook the zucchini, you want them to be very bright green and crisp looking. I debated just leaving them in the frying pan while cooking the corn and beans and then thought maybe I should actually put them in a spare bowl like the recipe said in order to avoid overcooking. It’s always a mental battle between following the recipe and just being lazy.

I tossed a little minced garlic in the pan for about a minute before adding the corn and beans. Our corn and beans ratio to zucchini looked a little off but I decided to roll with it. We added a tablespoon of Italian seasoning and 1/2(ish) tablespoon of the ground cumin into the pan. I really thought it was odd to mix Italian seasoning in here as well but just kept hoping for the best.

After letting the mix cook for a few minutes, I added the zucchini back into the pan with the corn and beans and let sit for another minute before serving. We each topped with parmesan cheese as the recipe instructed. As I was topping with parmesan I was thinking that cotija cheese probably would have tasted PERFECT with this meal, next time!

Overall Rating: “This is really good!” We were both pleasantly surprised by thee amount of flavor in this dinner! The Italian seasoning and Parmesan cheese paired well with the rest of the ingredients. I loved how quickly this one was to make. It definitely could be eaten warm or cold once refrigerated. I also love that this dinner could easily be a full meal or side dish. Either way I will definitely be cooking this again, very likely to be served in our home on a Monday!
