DAY 4 – PESTO MOZZARELLA SANDWICHES

Tonight felt very promising with grilled mozzarella sandwiches for dinner. We also decided to use a Pinterest recipe for Parmesan Roasted Potatoes.

Ingredients – We managed to find everything we needed but those dang chives. We switched it up with green onion for the roasted potatoes. I also have never seen roasted red peppers before.  Did you know those things come in a jar and in the the same isle as pickles?! I won’t lie, I was slightly grossed out and debated roasting my own for about half a minute and then decided I was too lazy and threw the far in my cart.

We were off to a rough start because we started cooking around 7:30 which was already close to the end Ben’s eating window. I pulled open the recipe for the Parmesan Roast Potatoes and saw that we had to soak the potatoes for 30 minutes with ice and water (who knew that was a thing?) before cooking them for 30-40 minutes.  I tried to hide the info and kept telling him I didn’t need his help to try and cover it up. 

Note to self: double check recipes earlier in the day for proper cook time.

After I sliced up about 5 small potatoes and let them soak for 15 minutes(not the full 30), we tossed with garlic powder, paprika, salt, pepper, and olive oil like the recipe noted.  We did however skip the measuring steps because we were trying to be efficient. Got them laid out on 3 cookie sheets and stuck them in the oven.

We got a new mattress today so we went to make the bed and kill some time while the potatoes were cooking.  We got into a big debate about whether or not we actually thought the mattress was comfy since we ordered it online without trying it our first and the smoke detector started going off 12 minutes into the potatoes cooking!  We pulled out the smallest tray that looked pretty burnt, opened the slider, and took down the smoke detector (Ben’s go to move- don’t tell our landlord) and went back to dealing with the bed.  After all was said and done the timer was going off, we hadn’t started the sandwiches and mostly all of the potatoes were crispy. A lot of regret right here.

 

We moved on to sandwich making which actually worked pretty well! We don’t have a panini press so we just used a frying pan and it was totally fine! My sister just bought us this awesome frying pan that is so non-stick you don’t have to put any oil or coating in it first! Worked great! The mozzarella didn’t melt quite as much as the actual Pinterest photo, although looking back at her original recipe it was not even in her article anyway, maybe just a stock photo?

Overall Rating: The sandwiches were great (and I am not a big sandwich girl at all) and the potatoes were mostly burnt, but still good.  We would definitely do both again, just maybe actually follow all fo the steps with the potatoes, cut them slightly thicker than I did, and watch the oven LOL!
