Day 11 – Bruschetta Chicken

Bruschetta Chicken Dinner with Sweet Potato

Overall Rating: Chicken is chicken, it is hard to make it exciting but the bruschetta was a nice touch! We probably would make this bruschetta chicken again, but it was not our favorite out of all of the dinners we have tried so far. The sweet potatoes are always a hit. My favorite part about having a sweet potato for dinner is that I stick half of it in the fridge to eat cold the next day as a snack – SO YUMMY!

Ben's Baked Sweet Potatoes

Ingredients:

  • 1 Potato per person
  • Olive Oil
  • Salt

 

Directions:

  1. Preheat oven to 450°F degrees
  2. Pokes holes all around potato with a fork
  3. Brush (or use your hands to rub) olive oil all around potatoes
  4. Add salt
  5. Place on baking sheet with parchment paper and cook in the oven for 50 minutes

It’s Wednesday and I finally got it together and planned out the meals for the rest of the week! Not my finest planning skills, but at this point I will take what I can get. Ben and I were both really excited when we saw the video for this Bruschetta Chicken on on Pinterest. I am telling you, those videos get me every time.  They also make me feel like an invincible chef. Of course, now that I have pulled up the recipe to consult while writing this article, I realize that I am not an invincible chef.

I was actually excited to eat chicken (never happens) after our Turkey Ragu and Loaded Turkey Nachos this week. This one looked super easy in the video.  Get the chicken, brush on olive oil (I used the spay because I don’t have a cool rubber brush), sprinkle on some Italian seasoning, and stick in the frying pan. Top with bruschetta and voila, you are done! I decided to make it even easier by skipping over the “make your own fresh bruschetta” step and decided to purchase one pre-made for the sake of time.  Now that I am drooling over her photos, I mildly regret it.

Spray/brush with olive oil and season with Italian seasoning, salt, and pepper.

Ben really wanted Baked Sweet Potatoes tonight.  It is his favorite go-to  “I can cook this by myself” food. Even though this recipe made no mention of sweet potatoes, I let him have it. For those of you looking for his yummy recipe, I will post it at the end!

Overall cooking was easy. We did go with the regular chicken breast instead of the thinly sliced ones. I definitely should have cut them in half before sticking them in the frying pan, but it was an after thought.  We will definitely be enjoying the leftovers tomorrow. I did FINALLY use the splatter screen my sister got me for Christmas, seriously the greatest invention ever!

Once the chicken was done, we topped with the pre-made bruschetta and balsamic glaze! I did realize that we forgot about the parmesan cheese, but it was great still pretty tasty.
