Before we get started I want to clear up any misconceptions- YES, you CAN eat raw brussels sprouts! While I believe that brussels sprouts taste best when sautéed or roasted, this raw brussels sprouts recipe has changed my mind for the better! Just make sure you thoroughly wash the brussels sprouts that you plan to eat raw!

Parmesan Brussels Sprouts Salad Ingredients
Remember when I said this was an EASY recipe? The great news is that is requires minimal ingredients that you most likely already have in your home!
Ingredients
- Brussels Sprouts – you can buy shaved brussels sprouts for the true salad feel or you can cut whole sprouts into quarters!
- Parmesan – finely grated or larger pieces will work!
- Lemon Juice – you can use 2 lemons for fresh lemon juice or 1/4 cup of lemon juice
- Olive Oil
- Dijon Mustard
- Green Onion
- Minced Garlic
- Salt & Black Pepper
How to Put it All Together
- Toss your brussels sprouts into a large bowl with 3/4 of the parmesan cheese

- Make the Salad Dressing
- Mix together the Olive Oil, Dijon Mustard, finely chopped green onion, minced garlic, and salt and pepper in a small bowl
